How is it different from the 31 inch eucalyptus?

This one is medium height at 24 inches and poly silk, best for most vases and as a filler. The 31-inch is taller with Real Touch leaves, better for console and floor vessels.

Can I bend or trim it?

Yes. The stem is wired, so you can fan and angle it, or trim the base shorter for a smaller vase.

How many stems should I buy?

A few stems work as filler in a mixed arrangement. For simple eucalyptus on its own, three to five stems give a full look in a medium vase.
